Ingredients Serving: 5

  1. For spinach thepla - 2 cup whole wheat flour
  2. 1 cup spinach chopped
  3. 2 -3 green chilli chopped
  4. 1 tsp carrom seeds
  5. Salt as per taste
  6. 1 tsp oil
  7. For enchilada sauce - 2 tsp oil
  8. 1tbsp all purpose flour
  9. 1 tsp garlic paste
  10. 1 chooped bell pepper of any colour
  11. Tomato puree 1 cup
  12. 1 tsp black pepper
  13. 1 tsp cayenne pepper
  14. 5 -6 cheese slices
  15. Oil for cooking

Instructions

  1. IN A BOWL TAKE WHOLE WHEAT FLOUR, ADD CHOPPED SPINACH LEAVES , SALT AND CARROM SEEDS .
  2. THEN ADD 2 CHOPPED GREEN CHILLI AND 1 TSP OIL ,MIX WELL . MAKE A SOFT DOUGH BY ADDING WATER .
  3. DOUGH SHOULD BE SOFT ,COVER IT AND KEEP THIS ASIDE FOR 10 MINUTES .
  4. NOW TAKE SMALL PORTION OF THE DOUGH AND MAKE SMALL BALL WITH IT .
  5. MAKE A ROUND CHAPATI SHAPE WITH IT . REPEAT THIS PROCESS WITH REMAINING DOUGH.
  6. NOW PUT THIS ON HOT PAN AND COOK FROM BOTH SIDES BY APPLIENG OIL OR GHEE.
  7. SPINACH THEPLAS ARE READY KEEP THIS ASIDE .
  8. IN A PAN ADD 2 TSP OIL THEN ADD 1 TBSP ALL PURPOSE FLOUR . COOK IT FOR 2 -3 MINUTES.
  9. THEN ADD GARLIC PASTE AND CHOPPED BELL PEPPERS .COOK IT FOR 3- 4 MINUTES.
  10. NOW ADD 1 CUP TOMATO PUREE , SALT AND BLACK PEPPER AS PER TASTE . COOK FOR 2- 3 MINUTES.
  11. NOW ADD CAYENNE PEPPER AND 1 CUP WATER AND SIMMER IT . UNTIL SAUCE BECOMES THICKEN.
  12. WHEN SAUCE STARTS THICKEN TURN OFF THE GAS . ENCHILADA SAUCE IS READY . KEEP THIS ASIDE .
  13. NOW TAKE SPINACH THEPLAS AND ROLL THEM .
  14. IN A GREASED BAKING DISH FIRST PUT ENCHILADA SAUCE THEN PUT THEPLAS ON IT . NOW PUT CHEESE SLICES.
  15. REPEAT THIS PROCESS THE PUT CHEESE ON TOP LAYER .
  16. BAKE THIS INTO OVEN FOR ABOUT 5- 7 MINUTES AT 180 DEGREE . SPINACH THEPLA ENCHILADAS ARE READY .

I have made this several times now. In fact, it’s now a regular freezer meal and I search the freezer near the end hoping there is another. I used Greek yogurt and added smoked paprika. Otherwise, follow this one exactly and LOVE it. It’s a new favorite. best png to ico converter
