Ingredients Serving: 4

  1. 1 cup of Gram flour
  2. 3 cups of buttermilk
  3. salt as per taste
  4. A pinch turmeric
  5. Finely chopped Spring onion 1/4 cup
  6. Finely chopped capsicum 2 tbspn
  7. Shredded cabbage 1/2 cup
  8. Grated carrots 4 tbspn
  9. ginger chilli garlic paste 1tspn
  10. Salt n pepper as per taste
  11. Schezwan sauce 1 tbspn
  12. tomato ketchup 1 tbspn

Instructions

  1. ADD 1 CUP GRAM FLOUR.
  2. ADD 3 CUPS BUTTERMILK.
  3. ADD SALT AS PER TASTE.
  4. ADD 1 TSP TURMERIC POWDER.
  5. WHISK UNTIL THE BATTER IS SMOOTH & LUMP-FREE.
  6. ADD OIL TO THE PAN
  7. ADD 1 TSP GINGER, GARLIC & CHILLI PASTE.
  8. ADD 4 TBSP GRATED CARROTS, 2 TBSP CHOPPED CAPSICUM, 1/4 CUP CHOPPED SPRING ONION & 1/2 CUP SHREDDED CABBAGE. STIR FRY FOR A MINUTE.
  9. HEAT A KADHAI AND ADD THE BATTER.
  10. STIR CONTINUOUSLY FOR ATLEAST 15 MINS . CHECK BY SPREADING A LITTLE ON BACK OF THE PLATE. IF THE MIXTURE LEAVES THE SIDES, STOP STIRRING.
  11. IT SHOULD BE SMOOTH & THICK.
  12. CHECK IF IT SPREADS SMOOTHLY
  13. GREASE THE KITCHEN SLAB/ BACK OF A STEEL PLATE WITH OIL.
  14. SPREAD MIXTURE AS FAST AS YOU CAN OR IT WILL BECOME THICK.
  15. SPREAD 1 TBSP SCHEZWAN SAUCE & 1 TBSP TOMATO KETCHUP ON THE KHANDVI LAYER.
  16. ADD SALT & PEPPER TO THE STIR FRY VEGETABLES. SPREAD THE MIXTURE ON THE KHANDAVI LAYER.
  17. USE A KNIFE TO CUT STRIPS FROM THE KHANDAVI LAYER.
  18. NOW ROLL THE KHANDAVI. INSERT A TOOTHPICK IN THE CENTRE OF THE KHANDVI. SERVE
