Easy as you see. Do try it. I would only want to tell you to be gentle while mixing the batter. Do not over mix. You may loose the crumb texture and land up with a rubbery stretchy muffin.

Ingredients Serving: 6

  1. Semolina flour 1 cup
  2. 1 ripe banana
  3. Baking soda 1/2 tsp
  4. Salt a pinch
  5. Baking powder 1/2 tsp
  6. Brown sugar 3 tbsp
  7. Buttermilk 3tbsp (lemon juice 1 tsp + milk)
  8. Vanila essence 1/2 tsp
  9. Honey 3 tbsp
  10. Butter + oil 3 tbsps
  11. Mixed nuts and seeds 1/3 cup
  12. Oats 2 tsps

Instructions

  1. TAKE 1 CUP SEMOLINA FLOUR
  2. ADD 1/2 TSP BAKING SODA
  3. PINCH OF SALT
  4. 1/2 TSP BAKING POWDER
  5. MIX AND KEEP ASIDE
  6. ADD A TSP OF FLOUR TO 1/3 CUP OF MIXED NUTS AND SEEDS AND KEEP ASIDE
  7. MIX A TSP OF LEMON JUICE TO 3 TBSPS OF MILK
  8. ADD 2 TSP OF OATS TO A PART OF THE MIXED NUTS FOR TOPPING
  9. KEEP THE BAKING TRAY READY WITH MUFFIN LINERS PREHEAT OVEN TO 180 °
  10. TAKE A FULLY RIPED BANANA (OVER RIPED PREFERRED)
  11. MASH
  12. COMPLETELY WITH A FORK
  13. ADD 3 TBSP BROWN SUGAR
  14. 3 TBSP HONEY
  15. 3 TBSP BUTTER + OIL (2:1)
  16. 1/2 TSP VANILA ESSENCE
  17. STIR AND MIX WELL TILL COMBINED
  18. ADD A PART OF SEMOLINA FLOUR
  19. LITTLE BUTTERMILK (MILK + LEMON)
  20. MIX AND REPEAT THE FLOUR AND BUTTERMILK STEPS
  21. ADD 2 TBSP OF HOT WATER
  22. MIX GENTLY
  23. ADD A PART OF THE NUTS AND MIX
  24. SCOOP INTO 3/4 OF EACH MUFFIN LINER
  25. GARNISH WITH REMAINING NUTS AND SEEDS
  26. ALL DONE
  27. READY TO GO INTO THE OVEN
  28. BAKE AT 170 FOR FIRST 20 MINUTES THEN 160 LAST 10 MINUTES
  29. VOILA! WELL MOUNTED BANANA MUFFINS
