Ingredients Serving: 4

  1. 1/2 Kg carrots (grated)
  2. 2 cups milk
  3. 1 cup milk cream (malai)
  4. 1 cup powdered sugar
  5. 1/2 teaspoon cardamom powder
  6. Dry fruits (for garnishing)

Instructions

  1. TAKE GRATED CARROTS.
  2. HEAT A THICK BOTTOMED PAN. ADD GRATED CARROTS.
  3. SAUTE THEM TILL THEY TURN TENDER AND WATER CONTENT ALSO GETS REDUCED. IT WILL TAKE AROUND 8 MINUTES.
  4. ADD ONE CUP MILK AND MIX WELL.
  5. ADD ANOTHER CUP MILK AND MIX WELL.
  6. KEEP THE FLAME HIGH AND LET IT BOIL.
  7. WHEN THE MILK GETS BOILED, TURN THE GAS TO LOW AND LET IT COOK. STIR EVERY 5 MINUTES.
  8. AFTER AROUND 20 MINUTES ADD MILK CREAM AND MIX WELL
  9. AGAIN, LET IT COOK FOR AROUND 15-20 MINUTES, STIRRING EVERY 5 MINUTES.
  10. ADD CARDAMOM POWDER AND MIX WELL.
  11. LET IT COOK FOR ANOTHER 20 MINUTES.
  12. ADD SUGAR AND MIX WELL. LET IT COOK TILL ALL THE MILK GETS EVAPORATED AND IT RELEASES OIL.
