ABOUT Roasted Brinjal Tangy Gojju RECIPE

Roasted brinjal or eggplant gojju is slightly tangy, sweetish and spicy. It's good flavour and aroma is really attractive without adding onion in traditional way.

Ingredients Serving: 8

  1. 2 big eggplants / brinjals
  2. Big lemon sized tamarind soaked in water
  3. Lemon sized jaggery
  4. salt to taste
  5. To temper...
  6. Cooking oil 2 tsp
  7. Urad dal 2 tsp
  8. Mustard seeds 1 tsp
  9. Red chilli 1
  10. Curry leaves few
  11. coriander leaves chopped 2 tsp for garnish

Instructions

  1. FOR ROASTED BRINJAL TANGY GOJJU ROAST BRINJAL IN HOT COAL
  2. IT'S TURNED INTO BROWN COLOUR
  3. YOU CAN ROAST IN OPEN FLAME OF GAS ALSO, ROAST TILL THE SHRINKS IN SIZE AND THE LOVELY SMOKY AROMA.
  4. LET IT COOL 5-10 MINUTES, LATER PEEL CHARRED SKIN AND DISCARD THE STEM
  5. NOW MASH IT
  6. MASH NICELY
  7. ADD SALT TO THE TAMARIND SQUEEZED WATER
  8. ADD JAGGERY AND SAUTE TILL IT DISSOLVES
  9. ADD TURMERIC POWDER
  10. DO THE SEASONING BY HEATING OIL AND FRYING URAD DAL
  11. WHEN URAD DAL TURNS GOLDEN COLOR ADD MUSTARD SEEDS AND RED CHILLI, LET IT SPLUTTER THEN SWITCH OFF
  12. ADD CURRY LEAVES AND POUR INTO TAMARIND WATER
  13. ADD MASHED BRINJAL
  14. MIX WELL AND CHECK THE CONSISTENCY, IF REQUIRED ADD SOME WATER AND GARNISH WITH CORIANDER LEAVES
