  1. Left over roti 4
  2. eggs 5
  3. onion 3 sliced
  4. tomatoes 2 chopped

Instructions

  1. CUT 4 ROTIS INTO SMALL PIECES
  2. MAKE SMALL SQUARES LIKE THIS
  3. HEAT 4 TBSP OIL
  4. ADD 1 TBSP FENNEL SEEDS
  5. ADD 2 CINNAMON STICKS
  6. ADD A FEW CURRY LEAVES
  7. ADD 1 GREEN CHILLI
  8. ADD 3 SLICED ONIONS, COOK TILL TRANSLUCENT
  9. ADD 2 CHOPPED TOMATOES, COOK TILL SOFT
  10. ADD 1/4 CUP FRESH CORIANDER
  11. MIX WELL
  12. ADD 1/2 TSP RED CHILI POWDER
  13. ADD 1/2 TSP CUMIN POWDER
  14. ADD 1 TSP SALT
  15. ADD 1/4 TSP GARAM MASALA
  16. MIX IN THE DRY MASALAS
  17. MIX 4 TBSP COCONUT MILK POWDER WITH 1/4 CUP WATER
  18. ADD THE COCONUT MILK TO THE MASALA, MIX
  19. ADD THE ROTI PIECES, COOK TILL DRY
  20. TAKE 5 EGGS, ADD SALT TO TASTE
  21. WHISK WELL
  22. ADD PEPPER TO TASTE
  23. SCRAMBLE THE EGGS IN A HOT SAUCEPAN
  24. ADD FRESH CORIANDER, MIX
  25. PLACE THE ROTI MIXTURE ON A PLATE
  26. ADD THE SCRAMBLED EGGS ON TOP
  27. SERVE HOT
