ABOUT Badam Puran Ghee Poli RECIPE

This is sweet roti made with the infusion of almonds to give extra flavour, I make this at home especially during festivals.

Ingredients Serving: 4

  1. For dough
  2. 1 cup maida
  3. 1/4 tsp turmeric powder
  4. 1/4 tsp Salt
  5. 2 tbsp milk or milk powder optional to enhance taste
  6. Ghee 2 tsp
  7. For stuffing
  8. Jaggery 1/4 cup
  9. Badam 1/4 cup soaked and deskinned
  10. Grated or dessicated coconut 1/4 cup
  11. ghee
  12. Cardamon powder or 2 pods

Instructions

  1. ADD 1 CUP ALL PURPOSE FLOUR. ADD 1/4 TSP TURMERIC POWDER
  2. ADD 1/4 TSP SALT. MIX WELL
  3. ADD 1 TSP GHEE
  4. ADD 2 TBSP MILK TO ENHANCE TASTE. MIX
  5. ADD WATER AND KNEAD A SOFT DOUGH
  6. ADD 1 TSP GHEE AND KNEAD
  7. CLOSE WITH A LID AND REST THE DOUGH
  8. SOAK 1/4 CUP BADAM FOR 3 HOURS
  9. ADD 2 CARDAMON PODS TO BLENDER
  10. ADD DESKINNED BADAM. GRIND THE MIXTURE
  11. IN A KADAI, ADD 1/2 CUP WATER. ADD 1/4 CUP PURE JAGGERY POWDER
  12. WHEN THE JAGGERY POWDER STARTS BOILING ADD BADAM ELAICHI MIX
  13. ADD 1/4 CUP GRATED OR DESICCATED COCONUT. MIX
  14. ADD 2 TSP GHEE. MIX AND COOL THE STUFFING
  15. TAKE A SMALL PORTION OF DOUGH. ADD GHEE
  16. PAT THE DOUGH GENTLY AND SPREAD THE DOUGH
  17. ADD PURAN AND SEAL THE STUFFING
  18. SEAL THE STUFFING
  19. GREASE YOUR HAND WITH GHEE AND PAT THE DOUGH GENTLY
  20. APPLY EQUAL PRESSURE ON ALL SIDES TO MAKE POLI
  21. ADD GHEE IN TAWA AND COOK POLI ON BOTH SIDES ON MEDIUM FLAME
