Ingredients Serving: 6

  1. To Grind as paste
  2. 2 tsp Fried Gram / Roasted gram
  3. 3/4 cup Tomato or 1 Big
  4. 2 tbsp Coconut
  5. 2 tsp Sambar powder
  6. 1/4 tsp Asafoetida / Hing
  7. For tempering-
  8. 1/2 tsp mustard seeds
  9. 1/2 tsp urad dal
  10. 1/2 tsp cumin seeds
  11. 1/4 tsp fenugreek seeds powder
  12. Few curry leaves
  13. 5 small Onions
  14. For the Sambar
  15. 3/4 cup  Arhar Dal
  16. 1 cup Brinjal 
  17. Coriander leaves handful
  18. Salt to taste
  19. 2 tbsp tamarind paste
  20. 1 Drumstick chopped into 2 inch pieces
  21. 5 small onions
  22. 1 Tomato medium

Instructions

  1. IN A GRINDER, ADD 2 TSP EACH OF ROASTED GRAM & SAMBAR MASALA, 2 TBSP COCONUT
  2. ADD 1 TOMATO
  3. GRIND INTO A PASTE
  4. HEAT 1 CUP WATER, 1 CARROT, 1 TOMATO
  5. ADD 1 DRUMSTICK, 1 SMALL BRINJAL, COVER & COOK FOR 5-6 MINS
  6. ADD THE GROUND MASALA PASTE
  7. ADD 1 CUP BOILED ARHAR DAL & 2 TBSP TAMARIND EXTRACT
  8. ADD SALT TO TASTE, WATER AS REQUIRED & SIMMER FOR 8-10 MINS
  9. FOR TEMPERING- HEAT 2 TSP OIL
  10. ADD A PINCH OF ASAFOETIDA, 1/2 TSP EACH OF URAD DAL & MUSTARD SEEDS
  11. ADD 1/2 TSP CUMIN, 1/4 TSP FENUGREEK SEEDS POWDER, FEW CURRY LEAVES
  12. ADD 2 DRY RED CHILLIES, 5 SMALL ONIONS, SAUTE FOR 2 MINS
  13. POUR THIS TADKA OVER THE SIMMERING SAMBAR
  14. ADD 1/4 CUP CORIANDER LEAVES, COOK UNTIL SAMBAR COMES TO A BOIL
