ABOUT Carrot Rice RECIPE

Ingredients Serving: 1

  1. Grated carrot 1/2 cup
  2. Grated coconut 2 tbsp
  3. 1 chopped Green chilli
  4. Salt to taste
  5. 2 tsp Oil (ginger oil)
  6. 1/2 tsp ghee
  7. 1/4 tsp mustard seeds
  8. 1/4 tsp cumin seeds
  9. 1/4 tsp chana dal
  10. Few curry leaves

Instructions

  1. Heat oil in a pan.
  2. Add cumin seeds, mustard seeds and 1 chopped green chilli. Sauté.
  3. Add chopped onions, curry leaves, cashews and peanuts. Sauté.
  4. Add grated carrots.
  5. Add salt and mix well. Cook for 3-4 minutes on a low flame.
  6. Add grated coconut. Cook for a few minutes.
  7. Add cooked white rice. Mix well.
  8. Add little ghee (optional) and mix well.
  9. Carrot rice is ready to serve.
