ABOUT Curd Rice RECIPE

Many people consider Curd Rice to be the best dish to carry along to school, work or travel. It is the Curd Rice that comes at the end, as a flavourful and soothing finish to a traditional spread.

Ingredients Serving: 1

  1. Rice - 1 cup
  2. Water - 3 cups
  3. Cold Milk - 1 1/2 cups
  4. Curd - 1 1/2 cup
  5. Cream - 2 tbsp
  6. Salt - as needed
  7. Cilantro - handful (finely chopped)
  8. For Tempering
  9. Oil - 1 tbsp
  10. Mustard Seeds - 1/2 tsp
  11. Channa Dal - 1 tsp
  12. Dry Red Chilies - 2
  13. Urad Dal - 1 tsp
  14. Green Chilly - 1
  15. Curry Leaves - 1 spring
  16. Ginger - 1/2 "piece (minced)
  17. 2 tbsp pomegranate
  18. 1 tbsp pomegranate

Instructions

  1. Take 1 cup washed and soaked rice. Cook the rice with 3 cups of water.
  2. Add some salt and cook the rice.
  3. Open the cooker. We need overcooked rice since it is easily mashed.
  4. When rice is cooked, mix and mash a part of the rice. Add milk and keep mixing until the milk is absorbed by the rice.
  5. Add the cream and the yogurt.
  6. Mix well.
  7. Heat oil for tempering in a small pan. Add mustard seeds and let splutter.
  8. Add the chana dal and urad dal. Wait for it to turn reddish-brown.
  9. Add the dry red chillies and curry leaves.
  10. Add finely chopped green chillies and garlic. Fry for a minute.
  11. Add to the curd rice. Add finely chopped coriander leaves and mix.
  12. Garnish it with chopped and grated carrots, fresh fruits and pomegranate.
  13. Serve.
