ABOUT Brinjal Rice RECIPE

Brinjal Rice is my family's favourite lunch box recipe. Brinjal rice with raita is a hit recipe. Its my own style of preparing brinjal rice.

Ingredients Serving: 3

  1. 500 gms brinjal
  2. Sliced onion 2
  3. Green chilli big 1
  4. curry leaves
  5. 1/2 tsp Turmeric
  6. 1.5 tsp salt
  7. For Spice Powder
  8. 2 tbsp channa dal
  9. 1 tbsp urad dal
  10. 1 tbsp sesame either white or black
  11. Cashews 4-6
  12. Red chillies 6
  13. Pepper 1 tsp
  14. Jeera 1 tsp
  15. Methi 1/2 tsp
  16. Hing 1/2 tsp
  17. For tempering
  18. oil
  19. Mustard
  20. Groundnut 1 tbsp
  21. Channa dal 1 tbsp
  22. urad dal 1 tbsp
  23. FOR GARNISH
  24. Coriander leaves

Instructions

  1. TAKE 2 TBSP CHANNA,1 TBSP URAD,1 TBSP SESAME,1 TSP JEERA,1 TSP PEPPER,1/2 TSP METHI,1/2 TSP HING, 4 CASHEWS AND 6 RED CHILLIES
  2. IN A KADAI, ADD OIL. SAUTE PULSES AND SPICES FIRST. THEN ADD RED CHILLIES AND GRATED COCONUT. SAUTE
  3. COOL THE MIXTURE AND GRIND TO FINE POWDER
  4. IN A KADAI. ADD OIL. ADD MUSTARD, WHEN IT CRACKS ADD 1 TBSP CHANNA, URAD AND GROUNDNUT
  5. SAUTE 2 SLICED ONION, 1 GREEN CHILLI AND CURRY LEAVES
  6. ADD 500 GMS OF BRINJAL
  7. SAUTE
  8. ADD 1/2 TSP TURMERIC AND REQUIRED SALT AS PER YOUR TASTE
  9. CLOSE WITH A LID AND COOK FOR 10 MINUTES ON LOW FLAME
  10. ADD GROUNDED SPICE POWDER AND MIX WELL
  11. MIX BRINJAL MASALA WITH COOKED RICE. GARNISH WITH CORIANDER LEAVES
  12. Serve with Raita
