Ingredients Serving: 4

  1. For taquitos dough
  2. 1/2 cup cornmeal
  3. 1/4 cup maida
  4. 1tsp salt
  5. 1tbsp olive oil
  6. Lukewarm water to prepare the dough
  7. For salsa
  8. 1 small chopped onion
  9. 2 chopped tomatoes
  10. 2green chillies chopped
  11. Few sprigs of mint leaves chopped
  12. Chopped coriander
  13. 1tbsp minced garlic
  14. 1tbsp lemon juice
  15. Salt
  16. 1tsp paprika powder
  17. For chicken and bean filling
  18. 1 cup boiled shredded chicken
  19. 1 cup boiled red kidney beans
  20. 1tbsp sour cream
  21. 1tbsp mayonnaise
  22. 1/2 cup shredded matured cheddar
  23. 1/2 cup shredded processed cheese
  24. 2tbsp chopped onion
  25. Chopped coriander
  26. Salt
  27. 2tsp paprika powder
  28. 1tbsp dried oregano
  29. Oil for shallow frying

Instructions

  1. GET ALL THE INGREDIENTS READY FOR THE TAQUITO DOUGH
  2. ADD THEM ONE BY ONE IN A MIXING BOWL
  3. PREPARE A SOFT DOUGH
  4. PINCH A SMALL BALL FROM THE DOUGH AND DUST SOME MAIDA OVER IT AND ROLL IT WITH THE HELP OF A ROLLING PIN
  5. PUT IT ON A HOT GRIDLE AND COOK ON MEDIUM FLAME
  6. FLIP IT OVER AND COOK ON OTHER SIDE TOO. REPEAT THE PROCESS WITH REST OF THE DOUGH AND STORE THEM IN AN AIRTIGHT BOX UNTIL USE
  7. GET READY ALL THE INGREDIENTS FOR THE SALSA
  8. MIX THEM ONE BY ONE IN A MIXING BOWL
  9. ONCE DONE COVER THE LID AND REFRIGERATE UNTIL USE
  10. GET ALL THE INGREDIENTS READY TO MAKE THE CHICKEN AND BEAN FILLING
  11. MIX THEM IN A MIXING BOWL ONE BY ONE
  12. GIVE IT A GOOD STIR AND KEEP ASIDE
  13. TAKE A TACO ON THE KITCHEN COUNTER AND STUFF AND WRAP IT TO A TAQUITO AS SHOWN IN THE VIDEO
  14. MAKE SURE TO FILL IT APPROPRIATELY AND WRAP IT TIGHT
  15. REPEAT THE PROCEDURE WITH REST OF THE TACOS AND FILLING
  16. IN A HOT GRIDLE POUR OIL TO SHALLOW FRY
  17. PLACE THE TAQUITOS ONE BY ONE INTO THE GRIDLE KEEPING SEAM SIDE DOWN
  18. FLIP THEM CAREFULLY ONCE THEY ARE DONE FROM ONE SIDE AND COOK THE OTHER SIDE. TAKE OUT GENTLY AND SERVE HOT
