Ingredients Serving: 4

  1. 2 cups grated bottle gourd (doodhi / lauki)
  2. 1/2 cup whole wheat flour (gehun ka atta)

Instructions

  1. SQUEEZE WATER FROM 2 CUPS GRATED BOTTLE GOURD, RESERVE THE WATER
  2. ADD 2 TBSP EACH OF SUGAR & LEMON JUICE, 1/4 CUP FENUGREEK / METHI LEAVES
  3. ADD 1/2 CUP GRAM FLOUR, 1 CUP MILLET FLOUR
  4. ADD SALT, RED CHILLI & TURMERIC POWDERS TO TASTE
  5. MIX INTO A SMOOTH, FIRM DOUGH, ADDING THE RESERVED WATER IF REQUIRED
  6. GREASE HANDS, DIVIDE THE DOUGH INTO 5 EQUAL PORTIONS
  7. STEAM THE ROLLS ON A GREASED PLATE FOR 20-25 MINS ON LOW HEAT
  8. THE MUTHIYAS ARE DONE NOW
  9. HEAT 2 TSP OIL, SIZZLE 1 MUSTARD SEEDS, TAKE OFF HEAT & POUR OVER THE MUTHIYAS
