Ingredients Serving: 6

  1. Cleaned goat legs -6 -8
  2. Turmeric powder 1/2 +1/4 tsp
  3. Chilli powder - 1/2 tsp
  4. Chopped onion -2
  5. Chopped tomato -1
  6. Ginger garlic paste -2 tsp
  7. Green chilli -2
  8. Oil -2 tbsp
  9. Cardamoms, cloves,cinnamon - each 2 piece
  10. Curry leaves -2 arc
  11. Salt - to taste
  12. Chopped coriander leaves - 2-3 tbsp
  13. To dry roast& paste ingredients:-
  14. Pepper -1 tbsp
  15. Cumin -1 tbsp
  16. Fennel -1 tsp
  17. Coriander powder -1 tbsp
  18. Grated coconut - half cup
  19. Cashews -8

Instructions

  1. RINSE THE CLEANED GOAT LEGS 3-4 TIMES.
  2. CUT EACH LEG INTO 3 PIECES
  3. PRESSURE COOK THE TROTTERS WITH TURMERIC POWDER AND WATER ABOVE IT.
  4. MIX WELL.
  5. WHEN YOU HEAR THE FIRST WHISTLE, LOW THE FLAME AND COOK FOR 30 MINUTES.
  6. NOW ROAST THIS INGREDIENTS AND GRIND.
  7. DRY ROAST PEPPER,CUMIN AND FENNEL.
  8. THEN ADD CORIANDER POWDER SLIGHTLY ROAST IT.
  9. COOL IT.
  10. TRANSFER TO THE JAR ALONG WITH CASHEWS AND GRATED COCONUT
  11. FINELY GRIND IT BY ADDING LITTLE WATER.
  12. NOW GET READY WITH THESE INGREDIENTS TO MAKE MASALA.
  13. HEAT OIL,ADD CARDAMOM, CLOVE,CINNAMON AND CURRY LEAVES.
  14. WHEN IT POPS ADD CHOPPED ONION.
  15. SAUTE WELL AND ADD GINGER GARLIC PASTE AND GREEN CHILLIES.
  16. STIR WELL.
  17. THEN ADD CHOPPED TOMATOES AND SALT.
  18. CLOSE,ALLOW IT TO COOK FOR 2 MINUTES.
  19. OPEN,ADD TURMERIC AND CHILLI POWDER.
  20. STIR WELL.
  21. SIMMER TILL MASALAS WELL BLENDED.
  22. AFTER HALF AN HOUR, PRESSURE RELEASED CARE FULLY OPEN THE COOKER.
  23. AGAIN SWITCH ON THE STOVE ALLOW IT TO BOIL,ADD THE GROUND PASTE AND SALT TO TASTE.
  24. LET IT BOIL FOR 3-5 MINUTES.TRANSFER THE COOKED TROTTERS TO THE MASALA VESSEL.
  25. CHECK THE COOKED TROTTERS, FLESH SHOULD BE SOFT.
  26. ADD CHOPPED CORIANDER LEAVES FINALLY.
  27. NOW AATUKKAL PAYA IS READY.
  28. POUR IT TO A BOWL.
