Ingredients Serving: 4

  1. Flour 1 1/2 cups
  2. Oil 2 tbsp
  3. Salt to taste
  4. Warm water for kneading
  5. For the stuffing...
  6. 1 1/2 cups peas boiled
  7. Green Chilli 1 chopped
  8. Chat masala 1 tsp
  9. Oil for deep frying
  10. Ginger paste 1/4 tsp
  11. Salt to taste
  12. Saunf 1/4 tsp crushed
  13. Oil 1 tbsp
  14. Amchur 1/2 tsp
  15. 1/4 tsp asafoetida
  16. Red chilli powder 1/4 powder
  17. Garam masala 1/4 tsp
  18. Cumin seeds 1/4 tsp

Instructions

  1. IN A MIXING BOWL ADD 1 1/2 CUPS FLOUR, 2 TBSP OIL, MIX
  2. SALT TO TASTE & USING FINGERTIPS FORM BREADCRUMBS. ADD WARM WATER.
  3. KNEAD A STIFF DOUGH. COVER LEAVE TO REST TILL PREPARE THE FILLING.
  4. HEAT 2 TBSP OIL, ADD 1/4 TSP EACH OF THEM CUMIN, SAUNF, ASAFOETIDA, GREEN CHILLI
  5. 1 TSP GINGER PASTE, 1 1/2 CUPS BOILED PEAS.
  6. 1/2 TSP CHAT MASALA, 1/2 TSP AMCHUR POWDER, 1/4 TSP GARAM MASALA.
  7. 1/4 TSP RED CHILLI POWDER MIX WELL.
  8. MASH WELL.
  9. MASH WELL AND ADD 2 TBSP FRESH CORIANDER
  10. LEAVE TO COOL.
  11. PEAS MASALA READY FOR STUFFING.
  12. KNEAD DOUGH AGAIN.
  13. DIVIDE DOUGH ONTO EQUAL SIZED BALLS
  14. ROLL OUT ROUNDS. STUFF WITH A LARGE TBSP OF THE DRY PEAS FILLING.
  15. PINCH TO SEAL.
  16. ROLL OUT THICKLY.
  17. HEAT OIL TILL MODERATLY HOT. ADD ADD THE KACHORIS TWO AT A TIME AND FRY OVER MEDIUM HEAT.
  18. FRY KACHORI BOTH SIDES.
  19. FRY TILL CRISP AND GOLDEN.
  20. SERVE HOT.
