Ingredients Serving: 10

  1. Maida 1/2 cup
  2. Suji 1 cup
  3. Oil for fry
  4. 1/2 cup lukewarm water
  5. Green corriender 1/2 cup
  6. Mint leaves 1/2 cup
  7. Jaljeera powder 2 tsp
  8. 2 lemon juice
  9. 2 green chillies
  10. Ginger 1 inch
  11. Roasted cumin powder 1 tsp
  12. Black pepper power 1 /4 tsp
  13. Salt to taste
  14. Black salt 1/2 tsp

Instructions

  1. TAKE 1 CUP SEMOLINA, 1/2 CUP FLOUR
  2. KNEAD INTO A SEMI-STIFF DOUGH USING 1/2 CUP LUKEWARM WATER
  3. APPLY SOME OIL ON TOP, COVER & KEEP ASIDE FOR 20 MINS
  4. ADD ALL INGREDIENTS TO A GRINDER, BLEND INTO A COARSE PASTE
  5. REMOVE THE GROUND PASTE IN A LARGE BOWL, ADD 1 LITRE WATER
  6. ADD 2 TSP JALJEERA POWDER, 1/2 TBSP ROCK SALT, 1/4 TSP PEPPER POWER
  7. ADD 2 TBSP LEMON JUICE, SALT TO TASTE
  8. ADD 1/4 CUP BOONDI, KEEP TO CHILL IN THE FRIDGE
  9. KNEAD THE READY DOUGH AGAIN TO SMOOTHEN IT
  10. DIVIDE INTO 4 EQUAL PARTS
  11. ROLL EACH PART INTO A BIG ROTI
  12. CUT OUT SMALL CIRCLES
  13. ROLL LIGHTLY INTO OVAL POORIS
  14. DEEP FRY IN HOT OIL ON LOW HEAT
  15. ONCE THEY SURFACE ON TOP, FLIP THEM & FRY
  16. FRY UNTIL GOLDEN BROWN & CRISP
  17. LEAVE TO COOL UNCOVERED FOR 2-4 HOURS
  18. CRACK THE TOP OF THE PURIS, ADD TAMARIND CHUTNEY AS PER TASTE, FILL THE CHILLED WATER & SERVE
