Ingredients Serving: 10

  1. 600 gram Mava (Khoya)
  2. 1/4 cup rava (Semolina)
  3. 500 gram maida (All purpose flour)
  4. 300 gram sugar
  5. 1/4 cup chopped dry fruits
  6. 1/2 cup desi ghee
  7. 1 cup oil + 1 cup ghee for frying
  8. 1 tbsp cardamom powder
  9. water as required

Instructions

  1. ROAST 1/2 CUP SEMOLINA ON MEDIUM HEAT TILL GOLDEN BROWN
  2. COOK 600 GMS KHOYA / MAWA ON MEDIUM HEAT
  3. SAUTE TILL IT TURNS GOLDEN BROWN, TAKE OFF HEAT
  4. HEAT 1 TBSP GHEE
  5. FRY 1/4 CUP CHOPPED DRY FRUITS, TAKE OFF HEAT WHEN DONE
  6. ONCE THE MAWA IS COOL, ADD THE DRY FRUITS, 300 GMS POWDERED SUGAR, MIX
  7. ADD 1 TBSP CARDAMOM POWDER, MIX & KEEP ASIDE
  8. TAKE 500 GMS FLOUR, ADD 1/2 CUP MELTED GHEE
  9. RUB GHEE INTO THE FLOUR USING YOUR FINGERTIPS
  10. ADD WATER LITTLE WATER AT A TIME, KNEAD INTO A SMOOTH & STIFF DOUGH
  11. KEEP ASIDE TO REST FOR 5 MINS
  12. TAKE A SMALL BALL OF DOUGH, ROLL INTO A POORI
  13. APPLY LITTLE WATER AROUND THE EDGES
  14. PUT THE READY STUFFING IN THE CENTRE, FOLD & SEAL THE ENDS
  15. MAKE A DESIGN BY PINCHING AND TWISTING THE EDGES LIKE THIS
  16. DEEP FRY IN HOT OIL ON MEDIUM HEAT
  17. FLIP & FRY ON FROM BOTH SIDES
  18. REMOVE FROM HEAT WHEN GOLDEN BROWN & CRISP, COOL & STORE IN AN AIRTIGHT CONTAINER
