ABOUT Vattayappam RECIPE

Fluffy yummy, mildly sweet Steamed Rice Cake has been one my childhood favourite snack. My grandma used to make using kallu chettu (palm wine/toddy) and the taste is so heavenly that I can still feel in my mouth. Here I have used yeast however I will recommend using toddy to make it. Vattayappam is popular snack in Kerala so I am sure anyone who has visited Kerala would have tasted it

Ingredients Serving: 4

  1. 1 cup ponni rice (sona masoori)
  2. 1 cup freshly grated coconut
  3. 1/4 cup -3/4 cup sugar (adjust as per taste)
  4. 1/4 tsp active dry yeast
  5. 1/2 cup Cooked rice
  6. cardamom seeds(7-8 cardamom)
  7. 4 tbsp cashews and raisins
  8. 1 tsp ghee + additional for greasing
  9. 1/8 tsp salt

Instructions

  1. SOAK RICE IN WATER FOR 6 HOURS OR OVERNIGHT
  2. CLEAN RICE THOROUGHLY, DRAIN EXCESS WATER
  3. IN GRINDER, ADD RAW RICE, COOKED RICE, CARDAMOM SEEDS AND GRATED COCONUT WITH WATER. GRIND WELL
  4. POUR BATTER INTO BOWL. ADD SUGAR, YEAST, SALT
  5. MIX WELL
  6. FERMENT BATTER FOR 3 HOURS
  7. IN A PAN, FRY CASHEWS, RAISINS IN GHEE
  8. BATTER HAS RISEN WELL AFTER 3 HOURS
  9. GREASE ROUND TIN
  10. POUR BATTER IN PREPARED PAN
  11. ADD THE FRIED CASHEWS, RAISINS ON TOP
  12. PLACE PAN IN STEAMER. STEAM ON MEDIUM HEAT FOR 15-20 MINUTES
  13. INSERT KNIFE IN CENTRE TO CHECK. SWITCH OFF ONCE DONE
  14. CUT THE APPAM WHILE STILL WARM
  15. SERVE WARM WITH TEA
