Ingredients Serving: 4

  1. For Kadai Masala:
  2. 2 tsp corriander seeds
  3. 1 tsp cumin seeds
  4. 1 tbsp Whole Black pepper
  5. 2 -3 Dry red chillies
  6. For Puree:
  7. 2 tsp oil
  8. 1 inch ginger chopped
  9. 9-10 cashews
  10. 3 garlic CLOVES
  11. 1 medium sized onion chopped
  12. 2 big tomatoes chopped
  13. 1/2 tsp turmeric powder
  14. 3/4 tsp red chillies powder
  15. salt to taste
  16. 4 tbsp water
  17. FOR GRAVY:
  18. 150 gms paneer cubed
  19. 3 tsp oil
  20. 1/2 capsicum cubed
  21. 1/2 tsp garam masala
  22. 1/2 onion cubed
  23. 3 tbsp cream
  24. 1/2 tsp crushed Kasuri methi
  25. 3/4 cup water
  26. salt to taste

Instructions

  1. DRY ROAST SPICES
  2. ALLOW TO COOL COMPLETELY
  3. GRIND TO FINE POWDER
  4. ADD GINGER, GARLIC TO HOT OIL AND SAUTE UNTIL RAW AROMA GOES AWAY
  5. ADD AND SAUTE ONIONS UNTIL TRANSLUCENT
  6. ADD TOMATOES, SAUTE UNTIL TENDER
  7. ADD TURMERIC, RED CHILI POWDER AND SALT
  8. ADD CASHEWS, SAUTE FOR A MINUTE
  9. ALLOW TO COOL COMPLETELY
  10. ADD LITTLE WATER AND BLEND TO FORM SMOOTH PUREE
  11. HEAT 1 TSP OIL, SAUTE PANEER UNTIL GOLDEN BROWN ON EDGES. KEEP ASIDE
  12. IN SAME PAN, ADD 2 TSP OIL AND FRY ONIONS AND CAPSICUM
  13. ADD PUREE AND SAUTE FOR 2 MINUTES
  14. ADD SALT AND WATER, MIX WELL
  15. COVER AND COOK FOR 5 MINUTES
  16. ADD PANEER
  17. ADD GARAM MASALA, 1 TBSP GROUND MASALA, KASURI METHI, CREAM AND GENTLY MIX EVERYTHING
  18. GARNISH WITH 1/2 TEASPOON GROUND MASALA, CORIANDER LEAVES, GINGER JULIENNE. SERVE HOT WITH ROTI ,NAAN OR PULAO
