ABOUT Schezwan Sauce RECIPE

Schezwan Sauce, a fiery hot and spicy sauce made from dry red chilli, garlic and sauteed onion, is a must have condiment with Indo-Chinese snacks like vegetable momos, spring rolls, French fries etc,. It is also an important ingredient for making Schezwan Fried Rice and Schezwan Fried Noodles.

Ingredients Serving: 10

  1. 50 gm Dry Red Chillies
  2. 4 tbsp finely chopped Garlic
  3. 2 tbsp finely chopped Ginger
  4. 2 tbsp Onion(optional)
  5. 1/2 cup Oil
  6. Salt as needed
  7. 1 tbsp Tomato sauce
  8. 1 tbsp Sugar
  9. 2 tbsp vinegar

Instructions

  1. REMOVE THE SEEDS OF 50 GM DRY RED CHILLIES
  2. DISCARD THE SEEDS, SOAK THE RED CHILLIES IN WARM WATER FOR 30 MINUTES
  3. TRANSFER THE SOAKED CHILLIES IN GRINDER
  4. GRIND THE CHILLIES TO A SMOOTH PASTE, ADDING VERY LITTLE WATER.
  5. HEAT 1/2 CUP OF OIL
  6. ADD 4 TBSP GARLIC, 2 TBSP GINGER, SAUTE ON HIGH FLAME FOR 2-3 MINUTES
  7. ADD 2 TBSP ONION AND COOK FOR 2-3 MINUTES
  8. ADD RED CHILLI PASTE AND COOK TILL RAW SMELL FADE
  9. ADD SALT, 2 TBSP VINEGAR, 1 TBSP SUGAR, 1 TBSP TOMATO KETCHUP
  10. 1/2 TSP SOYA SAUCE AND MIX WELL
  11. COVER AND COOK ON LOW HEAT TILL THE OIL SEPERATES
  12. SCHEZWAN SAUCE IS READY
  13. WHEN COOLS DOWN, TRANSFER IN AN AIRTIGHT CONTAINER
