Ingredients Serving: 2

  1. 3/4 cup pandam juice
  2. 1/2 cup rice flour
  3. A pinch of salt
  4. 1 cup shredded coconut
  5. 2 tbsp brown sugar
  6. 1 cardamom

Instructions

  1. TAKE 4 MATURED PANDAN LEAVES AND CUT INTO 1 INCH PIECES
  2. ADD ALL THE PANDAN PIECES TO A BLENDER, ADD LITTLE WARM WATER AND BLEND FOR 2 MIN.
  3. FILTER AND EXTRACT THE JUICE. IT SHOULD YIELD ABOUT 3/4 CUP PANDAN JUICE
  4. IN A PAN, ADD 1 CUP SHREDDED COCONUT, A PINCH OF SALT, 1 CARDAMOM POUNDED, 2 TBSP BROWN SUGAR
  5. MIX WELL USING HANDS
  6. HEAT THE PAN AND SAUTE FOR 5 MIN OR TILL THE SUGAR MELTS AND BLEND WELL WITH COCONUT.
  7. SWITCH OFF AND ADD 1 TBSP ROASTED BLACK SESAME SEEDS
  8. MIX WELL
  9. ADD SALT TO PANDAN JUICE AND START HEATING THE JUICE IN MEDIUM FLAME.
  10. WHEN IT BEGINS TO BOIL, REDUCE FLAME AND ADD RICE FLOUR LITTLE BY LITTLE AND CONTINUE STIRRING SIMULTANEOUSLY
  11. IN 2 MIN RICE FLOUR GETS COOKED AND YOU WILL BE ABLE TO ROLL IT AS SHOWN
  12. TAKE A SMALL AMOUNT OF FLOUR AND USING YOUR THUMB, MAKE IT LIKE A SMALL PLATE.
  13. IN THE CENTER, PLACE A TBSP OF COCONUT SUGAR MIX AND SEAL IT BY GATHERING ALL THE SIDES TO THE CENTER.
  14. GREASE BANANA LEAF WITH LITTLE OIL. PLACE THE PREPARED MODAK ON THE LEAF AND STEAM IT FOR 10 MIN. SERVE AND ENJOY...
