This recipe is a simple , delicious modification of leftover Roomali rotis . A filling , spicy breakfast for the spice lovers .

Ingredients Serving: 3

  1. Large Roomali rotis 4
  2. onion big sized sliced 2
  3. Ripe tomato big sized finely chopped 1
  4. ginger garlic paste 1/4 teaspoon
  5. oil 2 tablespoons
  6. Green cardamom pods 3
  7. cinnamon stick medium sized 1
  8. cloves 4
  9. green chillies 3
  10. turmeric powder 1/4 teaspoon
  11. Red Chilli Powder 1/2 teaspoon
  12. coriander powder 1/4 teaspoon
  13. Garam masala Powder 1/2 teaspoon
  14. Black pepper powder freshly powdered 1 teaspoon
  15. salt 1 teaspoon
  16. water to sprinkle 2 tablespoons
  17. coriander leaves chopped for garnishing .

Instructions

  1. In a wok , heat 2 tablespoons oil . Add cardamom pods , cloves , cinnamon stick , green chillies .
  2. Add 2 big sliced onions .Add 1/4 teaspoon ginger garlic paste . Sauté till raw smell leaves .
  3. Add 1 big mushy , chopped tomato . Sauté till it turns soft .
  4. Add turmeric powder , red chilli powder , coriander powder , Garam Masala powder .
  5. Add 1 teaspoon freshly ground black pepper powder , salt to taste .
  6. Add the julienned Roomali rotis . 4 large Roomali rotis used . Sprinkle 2 tablespoons water .
  7. Mix well so that masala combine and coats the roti strips . Garnish with fresh coriander leaves .
  8. Kothu Roomali rotis are ready . A simple delicious modification of leftover Roomali rotis .
  9. Serve hot with curd .
