ABOUT Achari Paneer Masala RECIPE

Easy and simple to make, this recipe is when you are running short of time and want quick curry. Paneer cooked in delicious tangy flavour of ground pickle masala

Ingredients Serving: 3

  1. 200 g paneer cubes
  2. Ground spices
  3. 1/8 tsp fenugreek seeds
  4. 1/8 tsp mustard seeds
  5. 1/2 tsp fennel seeds
  6. 1 tsp cumin seeds
  7. 1/4 tsp Nigella seeds
  8. 1 big tomato roughly chopped
  9. 3/4 cup beaten curd
  10. 1/2 tsp besan ( optional)
  11. 5-6 cashews
  12. 1/4 tsp turmeric powder
  13. 1/8 tsp hing
  14. 1 tsp coriander powder
  15. 1/2 tsp red chilli powder
  16. 2 tbsp oil
  17. 1 tsp crushed ginger and green chillies
  18. 1/4 tsp crushed kasuri methi
  19. 2 tbsp chopped coriander leaves
  20. salt to taste

Instructions

  1. DRY ROAST 1/8 TSP EACH OF FENUGREEK, MUSTARD & FENNEL SEEDS, 1 TSP CUMIN, 1/4 TSP NIGELLA SEEDS
  2. COOL, ADD TO A MIXER JAR, GRIND INTO A COARSE PASTE, SET ASIDE
  3. GRIND 5-6 CASHEWS, 1 TOMATO INTO A SMOOTH PASTE
  4. HEAT 2 TBSP OIL, ADD 1/8 TSP ASAFOETIDA,1 TSP CRUSHED GINGER-GREEN CHILLI, THE GROUND TOMATO PASTE
  5. SAUTE UNTIL THE MASALA LEAVES THE SIDES, ADD ALL THE DRY SPICE POWDERS
  6. ADD THE GROUND SPICES, MIX WELL FOR A FEW SECONDS
  7. LOWER THE HEAT, ADD 1/2 TSP GRAM FLOUR, 3/4 CUP BEATEN CURD & SALT, MIX & COOK FOR 1 MINUTE
  8. ADD 200 GMS COTTAGE CHEESE CUBES, COVER & COOK FOR 3-4 MINS
  9. ADD 1/4 TSP KASURI METHI, 2 TBSP CHOPPED CORIANDER LEAVES, MIX & TAKE OFF HEAT
  10. ENJOY HOT WITH ROTI, POORI, NAAN OR RICE
