ABOUT Mango rose cupcakes RECIPE

Delicious cupcakes flavoured with fresh ripe mangoes and decorated as rose.

Ingredients Serving: 6

  1. 3 mangoes medium sized
  2. 1/2 cup sugar
  3. 1 tesp lemon juice
  4. 1/2 cup curd
  5. 1/2 cup milk powder
  6. 1/4 cup oil
  7. 2-3 drops vanilla essence
  8. 1 cup all purpose flour
  9. 1 tesp baking powder
  10. 1/4 tesp baking soda
  11. 1/2 cup butter icing

Instructions

  1. HEAT 2 PUREED MANGOES ( MED. SIZE) WITH HALF CUP SUGAR AND 1 TESP LEMON JUICE.
  2. COOK FOR APPROX. 5 MINUTES UNTIL MIXTURE BECOMES TRANSLUCENT AND GLOSSY.LET IT COOL DOWN.
  3. IN A BOWL TAKE 1/2 CUP CURD, 1/2 CUP MILK POWDER, 1/4 CUP OIL.
  4. ADD 2-3 DROPS OF VANILLA ESSENCE AND MIX WELL.
  5. ADD COOKED MANGO PUREE. MIX WELL.
  6. SEIVE TOGETHER 1 CUP ALL PURPOSE FLOUR, 1 TESP BAKING POWDER AND 1/4 TESP BAKING SODA.
  7. SEIVE.
  8. MIX DRY INGREDIENTS IN WET INGREDIENTS AND FORM A SMOOTH BATTER.
  9. FILL THE BATTER HALF WAY IN GREASED PAPER CUPS.
  10. FILL THE CUPS HALF WAY THROUGH.
  11. MICROWAVE ON HIGH FOR 5 MINUTES.
  12. MANGO CUP CAKES ARE READY.
  13. DEMOULD AND TOP WITH BUTTER ICING.
  14. CUT A MANGO IN VERY THIN SLICES.
  15. ARRANGE MANGO STRIPS OVER ICING TO GIVE ROSE LOOK.
  16. RELISH !!
