Ingredients Serving: 6

  1. Mutton 1 kg
  2. Minced meat / kheema 200 grams
  3. onions big 6 finely chopped
  4. tomatoes big ripe and big 8 finely chopped
  5. Fresh ginger garlic crushed paste 1 tablespoon
  6. turmeric powder 2 teaspoons
  7. coriander powder 2 teaspoons
  8. Kashmiri Red chilli powder 2-3 teaspoons
  9. salt 2 teaspoons
  10. ghee 5-6 tablespoons
  11. water 1 medium glass
  12. Bay leaves 4
  13. cilantros for garnishing .
  14. yoghurt 1/4 cup
  15. Garam masala ingredients :
  16. Green cardamom 7
  17. cloves 16
  18. Black whole pepper 25
  19. cinnamon long stick 1
  20. nutmeg 1/4 teaspoon

Instructions

  1. In a heavy based pot , melt 4 tablespoons ghee . Add 4 bay leaves , add 1 kg mutton , 200 grams
  2. minced meat . Fry in high heat till meat turns colour . Add chopped onions,Ginger garlic paste .
  3. Add the freshly powdered Garam Masala ( 6 green Cardamoms, 25 Whole Pepper, 16 cloves , nutmeg, 1
  4. long cinnamon stick ) . Fry for 5 minutes . Add 1 teaspoon turmeric powder , coriander powder .
  5. Mix all and fry for another 5 minutes . Stir in between . Add finely chopped ripe tomatoes 6 .
  6. Add 2 teaspoons red chilli powder . Mix and fry till tomatoes turn soft . Fry for another 5 minutes
  7. Finally cook the meat in dum method for 30 minutes in medium heat . Add 1 glass water . Cover .
  8. After 30 minutes , add salt .
  9. Add 1/4 cup whipped hung curd . Mix ,slow cook for another 5 to 10 minutes .Thick consistency
  10. preferably. Add ghee . Garnish with cilantros . Himalayan RARA mutton is ready .
  11. Serve hot with hot rice / paranthas .
