Kothukari means minced meat in Tamil . Tamil Nadu style Kothukari biryani is always spicy and delicious . Known for its taste , fresh handmade masalas . This kothukari biryani with mint leaves enhances the flavour and taste of the actual biryani .

Ingredients Serving: 6

  1. Minced meat / Kothukari 800 grams ( add extra for rich taste )
  2. Basmati rice 4 cups soaked for 20 minutes .
  3. Bay leaves 4
  4. Cloves 8
  5. Star anise 4
  6. Stone flower 2
  7. Mace 2
  8. Cinnamon sticks 2 medium
  9. Cardamom 2
  10. onions 2 big thinly sliced
  11. Tomatoes ripe big 1 chopped finely
  12. For masala :
  13. Mint leaves few 10
  14. Garlic pods 20
  15. Ginger medium sized 2 chopped
  16. Green chillies 3
  17. Dry red chillies 3
  18. Fennel seeds 1 tablespoon
  19. Green cardamom pods 4
  20. Water little for grinding
  21. Other ingredients :
  22. Oil 3 tablespoons
  23. Ghee 4 +2 tablespoons
  24. Turmeric powder 2 teaspoons
  25. Red chilli powder 2 teaspoons
  26. Coriander powder 1 teaspoon
  27. Salt 3 teaspoons
  28. Mint leaves a bunch
  29. Coriander leaves for garnishing
  30. Water for rice 4 cups

Instructions

  1. Blend little mint leaves , 20 garlic pods with
  2. 2 medium ginger cut into pieces , 3 green chillies , 3 dry red chillies , fennel seeds , cardamom .
  3. In a wide pot , heat 3 tablespoons oil , 4 tablespoons ghee .
  4. Add all the biryani whole spices .
  5. Add 2 big onions thinly sliced . Sauté till light brown in high heat .
  6. Add 1 big ripe tomato finely chopped .
  7. Add 1/4 of the salt . Sauté till tomatoes turn mushy .
  8. Now add the ground mint paste .
  9. Add 800 grams minced meat . Mix and cook cover for 15 minutes in medium heat .
  10. In between, add 2 teaspoons turmeric powder .
  11. Add 2 teaspoons red chilli powder , 1 teaspoon coriander powder . Mix , cook till meat tenderises.
  12. Cover and cook .
  13. Meat is cooked .
  14. Add a bunch of clean fresh mint leaves . Sauté for a minute in low heat . Add the remaining salt .
  15. Add 4 cups of drained rice . Gently fry the rice in low heat without breaking the grains .
  16. Slow roast for 2 minutes .
  17. Add hot boiling water ( measured ) 1:1 ratio . Smear ghee . Cover . Set to cook for 10 minutes .
  18. Kothukari biryani is ready to serve . Garnish with mint and cilantros .
