ABOUT Gujrati Bhinda ni kadhi RECIPE

This is a yoghurt based curry made with stir fried ladies finger and some simple spices.

Ingredients Serving: 4

  1. Ladies finger 250 gms
  2. Buttermilk 3 cups
  3. Gram flour 2 tbsp
  4. Oil 1 tbsp
  5. Ghee 1 tbsp
  6. Mustard seeds 1/2 tsp
  7. Cumin seeds 1/2 tsp
  8. Fenugreek seeds 8 to 10
  9. Curry leaves 1 sprig
  10. Dry red chillies 2
  11. Asafetida 1 /4 tsp
  12. Sugar 2 tbsp
  13. Salt to taste
  14. Coriander to garnish

Instructions

  1. TAKE A TBSP OF OIL IN A PAN.
  2. WHEN OIL HEATS UP ADD WASHED,DRIED AND CHOPPED LADIES FINGERS(1 INCH PIECES).
  3. ADD SALT AND SAUTE UNCOVERED ON LOW FLAME.
  4. ADD 2 TBSP GRAM FLOUR TO 3 CUPS OF BUTTERMILK AND BLEND TO FORM SMOOTH BATTER.
  5. TAKE A TBSP OF GHEE IN ANOTHER PAN.
  6. ADD 1/2 TSP MUSTARD SEEDS AND 8 TO 10 FENUGREEK SEEDS.
  7. WHEN MUSTARD SEEDS SPLUTTER ADD 1/2 TSP CUMIN SEEDS,SOME CURRY LEAVES,2 DRIED RED CHILLIES AND A PINCH OF ASAFETIDA.
  8. KEEP GAS ON SLOW AND POUR THE BUTTERMILK AND BESAN BATTER.KEEP STIRRING.
  9. ADD SALT TO TASTE AND 1/2 TSP GRATED GINGER.
  10. ADD 2 TBSP OF SUGAR.LET THE KADHI SIMMER TILL 10 TO 12 MINUTES.IF NEEDED ADD MORE WATER TO ADJUST CONSISTENCY.
  11. JUST BEFORE SERVING ADD THE STIR FRIED LADIES FINGER AND SIMMER FOR 5 MINUTES.
