Baked Potato baskets filled with healthy black eyed beans and grated cheese.

Ingredients Serving: 6

  1. Potatoes 6 medium sized
  2. Black eyed beans 4 Tbsp (soaked 4-5 hours)
  3. Capsicum 1 small (chopped)
  4. Pizza sauce 2 Tbsp
  5. Processed cheese
  6. Salt to taste
  7. Green chutney
  8. Tomato ketchup

Instructions

  1. ADD LITTLE SALT TO SOAKED BLACK EYED BEANS AND PRESSER COOK 3 WHISTLES (IT SHOULD BE FIRM NOT MUSHY)
  2. PRICK THEM WITH FORK AND SOAK THEM IN SALTY WATER FOR 15 MINUTES.
  3. REMOVE POTATOES FROM WATER AND MICROWAVE ON HIGH (900 W) FOR 5 MINUTES.
  4. LET THEM COOL FOR 5 MINUTES THEN CUT IN HALF LENGTHWISE.
  5. SCOOP AND REMOVE CENTRE PORTION.
  6. STAIN IT ADD LITTLE SALT
  7. ADD PIZZA SAUCE
  8. ADD CHOPPED CAPSICUM AND MIX WELL. FILL EACH POTATO HALF WITH THIS MIXTURE.
  9. GRATE PROCESSED CHEESE GENEROUSLY OVER FILLED BASKETS.
  10. BAKE ON 200 °C (BAKE +GRILL COMBINATION PREFERRED ) FOR 5 MINUTES
  11. TRANSFER TO SERVING PLATE AND SERVE WITH GREEN CHUTNEY AND TOMATO KETCHUP .
