Ingredients Serving: 10

  1. 200 ml : Sour cream
  2. 1 1/4 cup : Rice flour
  3. 1 tbsp : All purpose flour
  4. 1 tbsp : Green chilli paste
  5. 1 tsp : Ginger grated
  6. 1 tbsp : Sesame seeds
  7. 1 tsp : Roasted cumin seeds
  8. Salt to taste
  9. Oil for Deep frying

Instructions

  1. TO A BOWL ADD ALL THE INGREDIENTS AND KNEAD THEM TO A DOUGH WITHOUT ADDING ANY MORE MOISTURE.
  2. ONCE EVERYTHING FORMS A DOUGH CONTINUE KNEADING FOR A MINUTE WITH GENTLE HANDS.
  3. SOUR CREAM CHAKLI DOUGH IS ALL READY AND NON STICKY TO TOUCH.THATS JUST PERFECT.
  4. GREASE THE CHAKLI PRESS AND STAR DISC WITH LITTLE OIL.SIMULTANEOUSLY HEAT OIL FOR FRYING CHAKLI.
  5. PINCH OUT ENOUGH DOUGH, SHAPE INTO A THICK LOG AND PLACE IN THE CHAKLI PRESS.
  6. ON A PARCHMENT PAPER OR FOIL PRESS OUT CHAKLIS ACCORDINGLY.I MADE MEDIUM SIZED ONES WITH 3 ROUNDS.
  7. TO MODERATLELY HOT OIL ADD THE SHAPED CHAKLIS AND FRY ON MEDIUM HEAT.
  8. ADD 6 TO 7 CHAKLIS AT A TIME DEPENDING ON SIZE OF PAN.DO NOT OVERCROWD AS IT LOWERS OIL TEMPERATURE
  9. FLIPPING AROUND IN REGULAR INTERVALS FRY THE CHAKLIS UNTIL GOLDEN ON BOTH SIDES.
  10. AS THEY TURN PERFECT GOLDEN ON BOTH SIDES REMOVE THEM WITH A SLOTTED SPOON.
  11. PLACE THE FRIED CHAKLIS TO A PAPER TOWEL LINED PLATE TO REMOVE ANY EXCESS OIL ABSORBED WHILE FRYING.
