ABOUT Hyderabadi Mirchi ka Salan RECIPE

Ingredients Serving: 3

  1. Green chillies-6
  2. Ground nuts 3 tbsp
  3. Sesame seeds 3 tbsp
  4. Dessicated coconut 2 tbsp
  5. Poppy seeds 1 tsp
  6. Garlic 4 cloves
  7. Ginger 1 inch
  8. Turmeric 1/2 tsp
  9. Red chilli powder 1 tsp
  10. Garam masala 1/2 tsp
  11. Fenugreek seeds 10
  12. Tamarind water 1/4 cup
  13. Salt to taste
  14. Oil 2 tbsp
  15. Fresh coriander

Instructions

  1. DRY ROAST 3 TBSP PEANUTS, SET ASIDE
  2. DRY ROAST 3 TBSP SESAME SEEDS, SET ASIDE
  3. ROAST 1 TSP POPPY SEEDS, 2 TBSP DESSICATED COCONUT ON LOW HEAT, SET ASIDE TO COOL
  4. ADD ALL THE ROASTED INGREDIENTS, 4 GARLIC CLOVES, 1 INCH PIECE OF GINGER INTO A MIXER JAR
  5. ADD 1/2 TSP EACH OF TURMERIC & GARAM MASALA POWDERS, 1 TSP RED CHILLI POWDER, GRIND
  6. ADD 1/2 CUP WATER, GRIND TO A SMOOTH PASTE, SET ASIDE
  7. TAKE BIG 5-6 GREEN CHILLIES, MAKE SLITS LENGTHWISE AT THE CENTRE
  8. HEAT 2-3 TBSP OIL, SHALLOW FRY THE CHILLIES ON LOW HEAT UNTIL GOLDEN BROWN ON BOTH SIDES, SET ASIDE
  9. ADD 1 TSP CUMIN SEEDS, 1/4 TSP ASAFOETIDA, 7-8 CURRY LEAVES TO THE SAME OIL
  10. ADD 1 CHOPPED ONION, SAUTE UNTIL GOLDEN BROWN
  11. ADD THE READY MASALA PASTE, MIX & SAUTE FOR 2 MINS
  12. ADD SALT, 1/4 CUP TAMARIND WATER
  13. ADD 2 CUPS WATER, SIMMER ON LOW HEAT FOR 10 MINS
  14. ADD THE FRIED CHILLIES TO THE SALAN, SIMMER FOR 5 MINS
  15. GARNISH WITH A HANDFUL OF CHOPPED FRESH CORIANDER, SERVE HOT WITH RICE OR ROTI
