Typically in north malabar ,we are too fond of spices and dry fruits. Kozhikode is famous for its variety of halwas. Nothing can match the popularity of gajjar ka halwa.this is supposedly a winter dish. Much during the mughal times.i make it this way. Deliberately a kerala touch. Hope you like it.

Ingredients Serving: 3

  1. Grated carrots 2 cups
  2. Sugar 1/4 cup
  3. Ghee 1/2 tbsp
  4. Freshly grounded cardamon powder a pinch or two
  5. Milk 1/4 cup
  6. Grated Khoya 1/4 cup
  7. Crushed badam and cashews
  8. Raisins

Instructions

  1. HEAT A WIDE OPEN PAN IN LOW FLAME.
  2. ADD THE GRATED CARROTS AND STIR FOR 5-10 MINS.
  3. KEEP STIRRING UNTIL IT BECOMES SOFT AND THE MOISTURE GOES OFF. NOW YOU CAN ADD THE GHEE.
  4. NOW ADD THE SUGAR. LET THE SUGAR MELT COMPLETELY. KEEP STIRRING.
  5. MEANWHILE ADD THE CARDAMOM POWDER ALONG WITH THE SUGAR.
  6. IT LOOKS BEAUTIFUL AND TENDER.
  7. WAIT TILL THE CARROTS BECOME SOFT AND ALL THE SUGAR DISSOLVED. SLOWLY ADD THE MILK WHILE STIRRING.
  8. NOW ITS SWIRLING TIME.
  9. TURN OFF THE FLAME AND ADD CRUSHED CASHEWS AND BADAM.
  10. ADD THE RAISINS AND SWIRL NICELY.
  11. FINALLY ADD THE KHOYA AND MIX IT WELL.
  12. THE PERFECT CARROT HALWA IS READY. GULP IT UP !
