ABOUT Japanese Cheesecake RECIPE

Ingredients Serving: 5

  1. 250g cream cheese at room temperature
  2. 6 egg whites
  3. 6 egg yolks
  4. 2/3 cup sugar
  5. 100 ml milk
  6. 50g soft butter
  7. 1/2 tsp vanilla extract
  8. 1/4 tsp salt
  9. 60g all purpose flour
  10. 2.5 tbsp corn flour
  11. 1 tbsp lemon juice

Instructions

  1. LINE BAKING PAN WITH PARCHMENT PAPER. COVER BAKING PAN TWICE WITH ALUMINIUM FOIL SIEVE FLOURS AND SALT. KEEP IT ASIDE
  2. IN A BOWL ADD CREAM CHEESE, BUTTER AND MILK
  3. USING DOUBLE BOILER, MELT AND WHISK MIXTURE WELL
  4. ALLOW TO COOL SLIGHTLY
  5. ADD VANILLA EXTRACT AND MIX WELL
  6. ADD EGG YOLKS AND WHISK WELL
  7. ADD LIME JUICE AND MIX
  8. ADD FLOUR AND WHISK WELL
  9. WHIP EGG WHITES UNTIL FOAMY
  10. ADD SUGAR AND BLEND UNTIL SOFT PEAKS ARE FORMED
  11. GRADUALLY ADD EGG WHITES MIX TO CREAM CHEESE MIXTURE AND MIX WELL
  12. POUR BATTER TO PREPARED PAN AND TAP GENTLY
  13. PLACE BAKING PAN ON BAKING TRAY FILLED WITH HOT WATER
  14. BAKE FOR 50-60 MINUTES IN PREHEATED OVEN AT 170 UNTIL TOP IS GOLDEN BROWN
  15. LEAVE CHEESECAKE IN OVEN FOR 20-30 MINUTES WITH OVEN DOOR OPEN
  16. REMOVE FOILS AND PARCHMENT PAPER, ALLOW TO COOL FOR 15 MINUTES
  17. DEMOULD AND TRANSFER TO SERVING PLATE. REFRIGERATE FOR 5-6 HOURS OR OVERNIGHT
  18. CUT AND SERVE
