Soya Chunks Salad with a Spicy Yogurt Dressing વાનગીઓ

Soya Chunks Salad with a Spicy Yogurt Dressing Ingredients to make ( Ingredients to make Soya Chunks Salad with a Spicy Yogurt Dressing Recipe in Gujarati )

  • 1 cup soya chunks
  • 1 medium onion cut into chunks
  • 1 medium capsicum cut into chunks
  • 6-7 button mushrooms quartered
  • 1 carrot cut into cubes
  • 1 gherkin roughly chopped
  • 4-5 sliced pickled jalapenos roughly chopped
  • A handful of sweet corn
  • A handful of olives
  • ½ cup of salad leaves (you can go for a mix of iceberg lettuce & lollo rosso)
  • Baked bread croutons (optional)
  • For the Dressing -
  • 5tbsp hung yogurt
  • 1tbsp mustard sauce
  • 1tbsp low fat mayonnaise
  • 1tsp low fat cheese spread (any flavour)
  • 2tsp tomato ketchup
  • 2tsp red chilli sauce
  • salt to taste
  • White pepper as per taste

How to make Soya Chunks Salad with a Spicy Yogurt Dressing

  1. Soak the soya chunks for an hour in luke warm water, drain & boil it for 8-10mins in salted water.
  2. Drain, cool & squeeze the soya chunks & keep aside
  3. Prepare all your vegetables & keep aside
  4. Mix all ingredients of the dressing & chill in the refrigerator.
  5. In a pan on high flame, stir fry the soya chunks for 2-3mins till light golden in colour, remove & keep aside.
  6. In the same pan on high flame, sauté the onions, capsicum for 20 seconds & remove in a bowl. Add carrots & sauté for a minute & remove.
  7. Now wait for the pan to become really hot & add the mushrooms for just 30 seconds & remove.
  8. Once cool, mix all the vegetables in a bowl with salad greens & chill in the refrigerator.
  9. Mix the dressing with the salad just before serving & sprinkle some of the baked croutons & enjoy a bowl of goodness.
