Tunday Kebab

Ingredients to make Tunday Kebab

  • 500 gm mutton mince
  • 1 tsp kachari powder
  • 2 tsp caraway seeds
  • 10 green cardamoms
  • 10 cloves
  • 4 mace blades
  • 3 black cardamoms
  • 10 Black peppercorns
  • 4 stone flowers
  • 2 tsp fennel seeds
  • 3 star anise
  • 4 dried rose petals
  • 3 kebab chini
  • 1 inch cinnamon
  • 1 nutmeg,crushed
  • 1 tablespoon khas ki jadh
  • 1 tablespoon pan ki jadh
  • 1 tsp red chilli powder
  • 2 teasp finely chopped garlic
  • 1 cup brown onions
  • 1/4 cup raw papaya paste
  • salt to taste
  • 2 teaspoons rose water
  • 1/4 cup ghee
  • 1/2 cup roasted gram flour
  • 1 tbsp butter
  • Chopped coriander for garnishing
  • onion rings for garnishing

How to make Tunday Kebab

  1. Grind together all spices to make a fine powder.
  2. Heat a piece of charcoal on direct flame.
  3. Mix mutton mince,garlic and raw papaya paste in a bowl.Crush fried onions and add red chili powder,3 tbsp ground powder masala,salt,rose water,gram flour and mix well.
  4. Transfer this on a plate,place a small bowl in the middle of the mutton mixture and put the hot charcoal in it.pour the butter over the hot charcoal and cover immediately.
  5. Heat a non stick tawa,drizzle the ghee.
  6. Divide the marinated mutton mixture into small equal portions,place on hot tawa,cook till golden and crisp on both sides.
  7. Garnish with chopped coriander,onions and serve.

My Tip:

Cook the kebab over low heat.

Hi Sayan,why have you used raw papaya paste n kachri powder also.One more curiosity,do these ingredients give the exact taste of the original tunday kabab bcoz I love tunday kabab.Indeed a great recipe
