This is a famous Mangalorean dish in which the okra or lady's fingers are marinaded with rice flour and spices and then stir fried. The lady's fingers are very crispy from outside and soft inside. There are many vegetables that are enjoyed by us but Bhindi is one veggie that most people love. A simple yet yummy recipe to follow is Bhindi fry. Bhindi is chopped to small roundels and pan fried with onions and spices that make this green vegetable delectable and a must have. Bhindi Fry is eaten across India and is prepared in vaious styles. Like, in South India curry leaves are added for flavor. One thing that really elevates Bhindi fry is the addition of onions, they go really well with Bhindi. The sweetness of caramelized onions makes this dish really yummy. Bhindi Fry recipe is very easy and simple, it is best eaten with fresh rotis or chapatis, raita can also be served with it. Some Bhindi fry recipes talk about adding tomatoes as well, it is a personal choice of adding tomato in Bhindi. Do not forget to garnish your Bhindi fry with some garam masala and green coriander.

Ingredients Serving: 2

  1. 1.5 tbsp rice flour
  2. 2 tsp madras curry powder
  3. 1 tsp Kashmiri chilli powder
  4. Dash of hing or asaefoetida
  5. 1/2 tsp turmeric powder
  6. 1/4 tsp Cayenne
  7. Salt to taste
  8. oil to fry
  9. A sprig of curry leaves
  10. 250 grams okra or lady's fingers
  11. 2 tsp Mustard Oil

Instructions

  1. Wash and clean okra. Pat dry each okra with a kitchen paper towel. This step is important. Do not skip this step.
  2. Chop the okra into 1 inch size pieces. Add mustard oil and coat the okra pieces well.
  3. In a separate mixing bowl, mix rice flour, hing, curry powder, Kashmiri chilli powder, turmeric powder, cayenne and salt as per taste.
  4. Coat the okra pieces with this mixture in a bowl. Mix well so that the okra is coated well on all sides. Keep it aside at least for an hour.
  5. Heat enough oil in a fry pan to shallow fry the vegetable. Once the oil is hot, add the curry leaves, fry for a few seconds. Next add the marinaded okra and fry. Cook on medium heat till the okra is completely cooked.
  6. Serve the hot and crispy okra immediately. You can drizzle lemon juice to make it a little tangy.
