Ingredients Serving: 4

  1. 6-7 small sized brinjal or eggplant
  2. 5 big sized potatoes
  3. 2 onions, grounded to a paste
  4. 2 tomatoes, puree made
  5. Ginger-garlic paste 1 tsp or finely chooped
  6. 1 tsp each of dry masala, salt, red chilli powder, dhaniya powder, haldi, kasoori methi, cumin seeds, fennel
  7. Handful of coriander leaves
  8. 1 tbsp curd
  9. Mustard Oil 1 tbsp
  10. 1 cup water


  1. First step is to cut the potatoes into equally sized cubes. Now take a pan and heat the mustard oil, fry the potatoes till they become red and crispy. Then take them out from pan and keep aside.
  2. For the second step, wash the brinjal and dry them with a cloth.
  3. To make a dry mixture of masalas, mix the coriander powder with salt, red chilli and amchoor powder, crushed fennel and roasted cumin, turmeric powder.
  4. Now make two cuts into the brinjals to stuff in the dry masala. After stuffing the masala, fry these brinjals in hot mustard oil at a low flame. When you see the brinjal become soft, take it out from the oil.
  5. The third step is to make the gravy. Take a pan, heat 2 spoon oil and put in the cumin seeds. Then put in the onion paste and saute, next add ginger-garlic and green chilli paste and stir fry. Then put in the tomato puree, when the mixture leaves the oil, add salt, red chilli, turmeric powder, dry coriander powder, kasoori methi and mix it well together.
  6. Finally pour in 1 cup of water and bring it to a boil, then add the fried potatoes. Once the gravy becomes a little thick, turn off the stove and add the fried brinjals.
  7. Garnish with coriander leaves and serve it hot.
