ABOUT Breakfast Bruschetta with Egg White Scramble & Pesto RECIPE

I am a Breakfast person, so my Twitter and Instagram timelines are flooded with Breakfast pics. I would like to have variety not the "Breakfast as Usual" for everyday. Lately, I have been obsessed with Egg Whites for two simple reasons as they are not smelly and are apt as "Post Workout Meal".

Ingredients Serving: 2

4 slices of baguette or any bread which is crusty
4 Egg Whites (Do not Beat)
2 tbspns Olive Oil
1 tbsp Extra virgin olive oil for dizzling
4 Cherry Tomatoes
2 Clove of Garlic
4 Fresh Basil Leaves
Basil Pesto
Salt to taste
Freshly crushed pepper

Instructions

Warm up Olive oil (1 tbspn) in a pan and transfer it to a cup.
Infuse garlic cloves to the olive oil
Put heat on a low flame add rest of olive oil in a pan.
Add Egg whites and stir fold them with a wooden spatula.
Remove from the pan once they start to scramble and gently blend them.
It should be soft and moist with the process on slowly folding off / on the pan.
Add Seasoning of salt, pepper and extra virgin oil once done.
Halve cherry tomatoes and add garlic infused oil to it.
Pan roast baguette slices on a pan.
Apply thin coat of Pesto on Baguette slices.
Layer up egg white scramble on the slices.
Drizzle a bit of extra virgin oil.
Tuck in Cherry tomatoes and Basil.
