Ingredients to make Corn spinach baked rice

  • For rice
  • 1 cup cooked rice
  • 1 tbsp butter
  • 1 tsp Oregano
  • 1 tsp chilly flakes
  • 1 tbsp finely chopped garlic
  • 1 onion finely chopped
  • 1 cup finely chopped mixed red ,
  • Yellow and green bell peppers
  • salt to taste
  • FOR CORN spinach MIXTURE
  • 1 cup finely chopped spinach
  • First blanch the spinach then chop
  • 1 cup boiled corn kernels
  • 1 tbsp finely chopped garlic
  • 1 tbsp finely chopped greenchillies
  • 1/2 cup finely chopped onion
  • 1 tbsp butter
  • 1 tbsp Plain flour
  • 1 cup milk
  • salt to taste
  • 1 cup grated processed cheese
  • 1 tsp butter

How to make Corn spinach baked rice

  1. For rice: Heat butter in a pan and put garlic, saute slightly, then add onion and saute well.
  2. Add bell peppers and again saute for 3-4 minutes, then add oregano, chilly flakes , salt and rice.
  3. Take them out in a bowl and Keep it aside.
  4. For corn spinach mixture : Heat butter in a pan , on low heat , then add chopped garlic and onion, cook for 5 minutes, then add chopped green chillies, mix well.
  5. Now add plain flour , cook for sometime, stirring continuously. Now add milk gradually, stirring.
  6. Continuously , so that it doesn't stick to the bottom and get burnt and no lumps remain.
  7. Then add chopped spinach and corn kernels, mix nicely.
  8. Add salt and mix well. The mixture is ready.
  9. For assembling : Take an oven proof bowl and grease the bottom with butter.
  10. Now first put the rice in the base, spread evenly. Then put the corn mixture on top.
  11. Now cover the top with grated cheese
  12. Now bake it in a preheated oven
  13. at 180 degrees for 15 minutes
  14. Or until the cheese melts and
  15. become little brown on top

My Tip:

Chop the spinach only after blanching them, it will taste better and colour is also maintained
