ABOUT Cheesy stuffed bellpapers RECIPE

Red and Yellow bell peppers stuffed with a cheesy potato filling, for a delicious snacking. Very simple yet eye-catching, kids gonna love this for sure.

Ingredients Serving: 4

  1. Capsicum 4
  2. Cheese 1/2cup grated
  3. Oil 2tsp
  4. For stuffing -
  5. Boiled and mashed potato 2
  6. Chopped onions 1
  7. Chopped green chilli 2
  8. Cumin powder 1tsp
  9. Coriander powder 1tsp
  10. Chilli powder 1tsp
  11. Garam masala powder 1/2tsp
  12. Amchur powder 1tsp
  13. Chopped coriander leaves 2tbsp
  14. Salt as per taste

Instructions

  1. Wash and pat dry capsicums. Cut the heads and remove seeds.
  2. Prepare stuffing. Heat a kadai, add onions, green chilli.
  3. When onion becomes light pink add the mashed potato, salt and all the spices. Mix well.
  4. When everything combines well switch off. Cool a bit.
  5. Stuff 2-3tbsp of prepared stuffing in the capsicum cavities.
  6. Cover with head.
  7. Cook on a kadai with few tsp oil covered.
  8. When capsicum changes color a bit take out the head and top with cheese, again cover the head of the capsicum.
  9. Cook covered for 3/4min or till cheese melts.
  10. Cheesy stuffed capsicum is ready.
