ABOUT MIRCHI KA SALAN RECIPE

Mirchi ka Salan is a traditional Hyderabadi Chilli Curry which is served as an accompaniment with biriyani. This goes well with jowar ki roti or even plain rice too.

Ingredients Serving: 4

  1. Big green chillies - 4-5
  2. Turmeric powder ... 1/4 tsp.
  3. Salt .. to taste
  4. Oil ... 3-4 tbsps
  5. (For Dry Masala:)
  6. Sesame seeds ..... 1 tsp
  7. poppy seeds ........ 1 tsp
  8. Peanuts ............... 1 tbsp.
  9. Kalonji ................ 1 tbsp.
  10. Dry red chillies .. 1
  11. Cloves ................. 2
  12. Cardamoms ...... 2-3
  13. Cumin seeds ..... 1 tsp
  14. Cinnamon ........ 1 small piece
  15. Saunf ............... 1/2 tsp
  16. Dry dessicated coconut ... 1 tbsp
  17. (Wet Masala:)
  18. Onions ......... 1
  19. Tomato ....... 1
  20. Green chillies .. 1
  21. Coriander leaves ... 1 tbsp
  22. Garlic .................. 5-6 cloves
  23. Ginger .................. small piece
  24. Tamarind ......... size of a small lime
  25. Yogurt ............. 1-2 tbsp
  26. (For Tempering:)
  27. Mustard seeds ... 1 tsp
  28. Asafoetida ........... a pinch
  29. Curry leaves

Instructions

  1. Dry roast and grind the ingredients mentioned for dry masala. If you don't have dry coconut, you can add fresh coconut to the wet masala .
  2. Grind the ingredients for wet masala without adding any water.
  3. Wash and cut the green chillies into big pieces.
  4. Heat oil and fry the chillies for a minute until half done.
  5. In a pan heat a little oil and add the tempering ingredients.
  6. When they crackle, add the wet masala and saute it for 1-2 minutes on medium flame. Add salt and turmeric powder.
  7. Now add the dry masala and the green chillies. Mix it and add about 1 cup water and simmer to cook. If you need more gravy add water accordingly.
