ABOUT Veg Mughlai Paratha RECIPE

These flaky crispy parathas filled with nutritious vegetable and cottage cheese filling are perfect for Iftaar parties.They are also perfect wholesome meal for kids.

Ingredients Serving: 4

  1. Wheat flour 1 cup
  2. Maida 1 cup
  3. Semolina 2 tbsp
  4. Oil 2 tbsp
  5. Salt 1 tsp
  6. For filling:
  7. Onion 1/2 cup
  8. Capsicum 1/2 cup
  9. Carrots 1/2 cup
  10. Cottage cheese 150 gms
  11. Ginger garlic paste 1 tsp
  12. Oil 1 tbsp
  13. Turmeric 1/2 tsp
  14. Chilli powder 1 tsp
  15. Coriander cumin powder 1 tsp
  16. Garam masala 1/2 tsp
  17. Dry mango powder 1 tsp
  18. Mint leaves 6-8
  19. Coriander leaves 2 tbsp

Instructions

  1. First take wheat flour,maida and rawa in a mixing bowl.
  2. Add oil,salt and water ro knead a semisoft dough.
  3. Cover and keep for 10 minutes.
  4. Now to prepare stuffing cut all vegetables.
  5. Heat 1 tbsp oil in a pan and add the onions.Saute till they turn translucent.
  6. Now add ginger garlic paste and saute for a minute.
  7. Add the capsicums and grated carrot.
  8. Add salt and mix.Cover and cook till the vegetables become soft.
  9. Add the dry spices.
  10. Mix and cook for a minute.
  11. Now add crumbled cottage cheese.
  12. Mix and add chopped mint leaves and coriander.
  13. Switch off the gas.
  14. Now take a ball from dough and roll into a thin chapatti.
  15. Place 2 tbsp of stuffing on the roti.
  16. Now fold from both sides to cover the stuffing.
  17. Fold the remaining two sides also to form a rectangle.
  18. Now put this paratha in a preheated pan and roast on medium to low flame till brown spots appear.
  19. After 3 to 4 minutes turn the paratha to roast on other side.
  20. Apply a tsp of oil on the upper side and turn again.
  21. Press lightly with spatula so that paratha gets cooked evenly.Apply a tsp of oil this side also and cook both sides till golden brown spots appear.
  22. Remove the mughlai parathas on a plate.
  23. Cut into two parts from the middle and serve hot with green chutney and curd or raita.
