ABOUT Bakharkhani Roti RECIPE

Kashmiri or Mughlai sweet flat bread which tastes best with Spicy gravy

Ingredients Serving: 5

  1. 2 cups flour
  2. 1/2 cup ghee
  3. 1/2 cup milk
  4. 1 tbsp sugar
  5. Salt
  6. 1/2 cup blanched almonds
  7. 2 tbsp raisins
  8. 1 tbsp poppy seeds
  9. 1 tsp baking powder

Instructions

  1. Slice the almonds or grind coarsely
  2. Mix salt, flour, sugar, baking powder, almonds and raisins
  3. Add milk and ghee. Reserve remaining ghee for greasing the rotis. Knead for 15 minutes to form smooth dough. Cover and rest for 2 hours
  4. Divide dough in equal portions. Roll out as roti, now fold the dough in semi circle, sprinkle little poppy seeds and ghee. Fold and roll the dough again to form roti. Prick roti with fork all over
  5. Cook roti in tandoor or grill in oven or pan. For oven, preheat to 200 deg and bake for 10-12 minutes. Both the sides should be cooked. Smear thoroughly with ghee and serve hot with spicy gravy
