ABOUT pineapple firni RECIPE

Firni is a type of rice pudding.It may had been the influence of mughlai cuisine,but mingled with indian touch later.Firni is prepared in various way at different countries in Middle east & Europe.Mainly rice flour,milk,sugar are used in this and cardamom,rose water,saffron like rich flovours are added to this.

Ingredients Serving: 5

  1. milk 2 Ltrs
  2. basmati/gobindovog rice 100 gms
  3. sugar powder 120 gms
  4. milk powder 150 gms
  5. pineapple puree 60 gms(store brought)
  6. pineapple flavour 1 tsp
  7. food color 4 drops
  8. grated alomond,cashews,pistachios
  9. almond,pistachios,cherry
  10. Cardamom 3

Instructions

  1. soak the rice overnight and spread in a kichten towel to dry it
  2. boil the milk till it reduced in half of it,(use a heavy bottom milk pan)
  3. keep a wooden spoon over the pan so that the milk would be reduced of it's quantity without getting spilled over
  4. in the mean time ground the rice into coarse powder or in rawa like consistency, along with the seed of cardamoms
  5. now check the milk quantity. if it would reduced to half, keep the flame down for 2 min to give milk time to get cooled from the boiling temperature
  6. now take out 1/4cup milk from pan & keep aside.
  7. pour the rice flour carefully in batches,so that it couldn't get into lumps, stir frequently by one hand and mix the rice flour by another hand
  8. keep boiling & stiring for 5/6 min
  9. add the milk powder into that 1/4 cup milk,dilute it add to the pan
  10. add the sugar powder & stir constantly
  11. when u get the sticky consistency, switch off the flame keep aside to cool down
  12. now add the crushed nuts into the warm firni.
  13. now take a bowl mix the pineapple puree,flovour & color mix it
  14. add this to the cooled firni
  15. pour in earthen matka,keep in freeze for atleast 2 hours
  16. garnish with chopped almond,pista,cherry
  17. serve chilled
