Yummy and delicious kheer, made with cauliflower.

Ingredients Serving: 4

  1. 1 liter full cream milk
  2. 1/2 bowl grated cauliflower
  3. 1/2 bowl roasted and coarsely grinded makhana /fox nut /lotus seeds
  4. 1/4 bowl sugar or per taste
  5. 1/4 bowl fried chopped nuts (almonds cashews pista )and few raisins
  6. 2 tsp ghee
  7. 1 tbsp dried rose petals

Instructions

  1. In a pan fry all the nuts with one spoon ghee chop and keep aside
  2. Roast makhanas in the same ghee and grind to a coarse powder
  3. In the same pan add cauliflower sautey until all the moisture starts to evaporate
  4. Add more one tsp ghee in it fry for one to two minutes till it starts to brown,
  5. Immediately off the flame (don't fry till golden)
  6. In a heavy bottom pan or in a wok boil milk let it simmer
  7. Add makhana powder with sugar boil till sugar dissolves
  8. Add cauliflower with 3/4 quantity of nuts and cardamom seeds
  9. Keep stirring while simmering till we get desired consistency of kheer or reduced the milk till half
  10. Put off the flame
  11. Garnish with chopped nuts and dried rose petals
  12. Serve hot or chill
  13. Chilled kheer will be a good test..
  14. Really its heavily..
