ABOUT ROASTED SWEET POTATO KEBABS RECIPE

A kebab with double stuffing

Ingredients Serving: 3

  1. 3 pieces of sweet potatoes
  2. 2 tbsp finely chopped ginger and green chillies
  3. 2 tbsp finely chopped coriander
  4. 2 tbsp almond powder
  5. 1/4 tsp mace powder
  6. 1/4 tsp elaichi powder
  7. 1 tsp mint powder along with some white sesame seeds
  8. 1/2 tsp amchur powder
  9. Salt to taste
  10. 5 pieces of dates , deseeded
  11. 5 sticks of processed cheese
  12. 2 tbsp ghee for roasting the kebabs
  13. Some more chopped coriander for garnishing
  14. Some onion rings for garnishing
  15. 5 pieces of halved cashews
  16. Some water to help in giving the shape of a kebab
  17. 1 tsp chaat masala for garnishing

Instructions

  1. Roast the sweet potatoes on direct fire
  2. Roast them until becomes black from outside and soft from inside
  3. Peel them , by dipping your hands in water everytime you take out the peel
  4. When becomes cool then grate them in a bowl
  5. The grated sweet potatoes
  6. All the ingredients together
  7. Add all the ingredients in a bowl like grated sweet potato , ginger green chillies , coriander , mace powder , elaichi powder , amchur powder , mint powder with sesame seeds and salt
  8. Mix nicely with your hands and make it like a dough
  9. Make equal sized balls from the dough
  10. Now stuff the cheese sticks in each of the dates
  11. Flatten each ball in your palm and place the date in the center
  12. Cover it nicely from all the sides and with the help of little water give it a shape of a kebab
  13. In this way prepare all the kebabs and stick each cashew halve on each kebab , by pressing it a little
  14. Take some ghee for roasting
  15. Grease a pan with some ghee
  16. Place the kebabs in the hot pan
  17. Roast them on low heat by turning them at regular intervals , until become light brown from all the sides
  18. The kebabs are ready to serve
  19. Muddle mint leaves , lime pieces , black salt for rose mint mojito
  20. In a jug take out the mixture and add lime juice and rose syrup
  21. Add chilled water
  22. The rose mint mojito is ready
  23. Arrange the kebabs in a platter , garnish with onion rings and chopped coriander , serve with rose mint mojito , green chutney , tomato sauce and lemon slice , sprinkle some chaat masala on top of the kebabs
