ABOUT Sheer khurma RECIPE

Eid is incomplete without sheer khurma, it's originates from Afghanistan, but in India everyone is making on eid ul fitra, so I have considered as a Indian dessert. You can serve it hot or chilled, taste remains same!!!

Ingredients Serving: 6

  1. Milk 1 litre
  2. Fine vermicelli 3/4 cup
  3. Chopped pistachios 2 tbsp
  4. Chopped almonds 2 tbsp
  5. Raisins 2 tbsp
  6. Soaked dry dates 6
  7. chironji 2 tbsp
  8. Ghee 3 tbsp
  9. milkmaid 200 gm

Instructions

  1. Heat ghee in pan, saute chopped almonds,pistachios, raisins, chironji, till light brown. Take in a bowl.
  2. In same ghee saute vermicelli till it gets slightly brown, on low flame.
  3. Now take heavy bottomed pan, add 1 liter milk with sugar and cook till milk reduces to 3/4 th the quantity.
  4. Whilst that is cooking, take soaked dry dates, remove it seeds and add in milk, Cook for 10 minutes on low flame.
  5. Now add all nuts, chironji, roasted vermicelli ,Cook till vermicelli softens.
  6. Ad milkmaid and cook for 5 minutes on medium flame with continous stirring.
  7. Switch off the flame and serve in bowls, garnish with chopped nuts.
