Ingredients Serving: 4
120 gms Unsalted butter
250 ml water
5 ml of vanilla extract
1 cup of all purpose flour
1/4 teaspoon salt
4 eggs
45 ml hot water
1 cup icing sugar
30 grams chocolate (semi sweet)
Pastry cream filling ingredients:
1/4 cup caster sugar
5 ml vanilla extract
225 ml of heavy cream
Instructions
Preheat the oven to 230 degrees Celsius. Also grease a cookie sheet and keep aside.
Take a medium sized pan, add in 100gms of butter, 1 cup water and bring to a boil. Make sure to continuously stir it till the butter completely melts.
Then lower the heat and add the all purpose flour and salt. Stir this mixture thoroughly until it begins to form a stiff ball. Remove the pan from the heat.
Break the eggs one at a time add it into this mixture while stirring continuously. Dough for eclairs is now ready.
With a spoon or a pastry bag, pipe or spoon the dough onto cookie sheets into about 4 inch long strips.
Bake for 15 minutes then reduce the heat to 165 degrees celsius and bake for 20 minutes more.
Check if it is cooked by lightly tapping on the bottom and you will hear a hollow sound.
Once cooked, leave it on a wire rack to cool down.
In the meantime you can prepare the filling, take a separate bowl and add in the cream, sugar and vanilla extract.
With the help of an electric mixer beat this mixture until it is stiff.
Carefully cut the top parts of the pastries using a sharp knife, fill in the pastry cream and replace the top parts.
Heat a medium sized pan on low heat, melt the chocolate and add 20gms butter in it for the icing.
Add in in the 1 cup sugar and 5 ml vanilla extract. Blend this mixture and pour in the hot water, a little at a time, till the icing is smooth and creamy.
Remove pan from the stove, let it slightly cool down then drizzle this carefully on top of the eclairs.
Serve warm or you can also opt to refrigerate them for a while before serving.
