Tomato Rice

Make it with raw or cooked rice and the result is always flavourful and yummy.

Ingredients Serving: 3

  1. Rice raw 1/2 cup
  2. Onion diced 1
  3. Ginger garlic paste 1 tsp
  4. Tomatoes diced 1 cup
  5. Tomato puree 2 tbsp
  6. Tomato sauce 1 tsp
  7. Whole red chillies 2
  8. Green chillies (seeds removed) 1
  9. Channa dal 1/2 tsp
  10. Urad dal 1/4 tsp
  11. Mustard seeds 1tsp
  12. Curry leaves 12
  13. Fenugreek seeds 4
  14. Hing a pinch
  15. Cashewnuts fried 2 tbsp
  16. Star anise 1
  17. Cloves 2
  18. Dessicated coconut 1 tbsp
  19. Sambhar masala 1 tsp
  20. Salt 1/2 tsp or as per taste
  21. Red chilli powder 1/4 tsp
  22. Sugar 1/8th tsp
  23. Coconut oil 3 tbsp


  1. Cook rice adding salt, star anise, cloves and some oil. Drain excess water and spread rice in a big plate. (Rice should to be 95% cooked)
  2. In a wok, heat oil, add hing and fenugreek seeds, mustard seeds and curry leaves.
  3. As the seeds splutter, add dals and fry till golden. Add the onion.
  4. Cook till onions turn transparent.
  5. Add ginger garlic paste, fry well.
  6. Add tomatoes and cook till soft. Add tomato puree, tomato sauce, salt and all the masalas mentioned. Add coconut and fried cashews.
  7. Now mix cooked rice and stir well till tomato mixture gets coated well. Remove from heat and keep covered.
  8. If adding raw rice - Add rice in tomato mixture. Add 3/4 cup water, salt 1/2 tsp, and cook till 2 whistles on high heat. Remove from heat.
  9. Serve with curd/stew.
