About Masala Paniyarams/Paddu/Appe Recipe

Paniyarams/Paddu/Appe is a South Indian dish made by steaming batter using a mould called the paniyaram pan/appe patra. This dish is a regular breakfast item in most south indian houses.

Masala Paniyarams/Paddu/Appe

Ingredients to make Masala Paniyarams/Paddu/Appe

  • 2 measures raw rice
  • 1 measure urad dal
  • oil to roast paniyarams + tempering
  • salt to taste
  • For the tempering (For about 1/2 kg batter)
  • 1 tbsp cumin seeds
  • 1 large onion, chopped
  • 2 green chillies, chopped
  • 2 tbsp coriander leaves, chopped
  • 1 inch ginger, grated
  • 7- 8 curry leaves, chopped

How to make Masala Paniyarams/Paddu/Appe

  1. Soak both rice and urad dal separately for about 3 hrs.
  2. Grind them into a semi fine paste using a wet grinder. Both the urad dal and rice to be ground separately with very little water.
  3. Mix the two and let it ferment overnight for about 9-10 hrs/ overnight . Next morning the batter will bubble and double in quantity . Add little salt to the batter
  4. To the ready batter add a tempering of chopped onions, cumin seeds, chopped green chillies, chopped coriander, curry leaves and grated ginger. Mix well.
  5. Heat the appe patra/ paniyaram pan pour little oil into each compartment.
  6. Pour a tbsp full of batter into each compartment, let it cook well with the lid on. Once it turns crispy, turn them and let the other side cook.
  7. Your Masala Paniyarams are ready & can be had as is or with coconut chutney or gun powder!!
