ABOUT Sindhi style chicken RECIPE

Healthy version of making chicken with less oil. Chicken is loved by most by non vegetarian.

Ingredients Serving: 4

  1. for marinating chicken
  2. Half kg chicken
  3. half cup fresh curd
  4. One teaspoon turmeric powder
  5. 2 teaspoon coriander powder
  6. 2 teaspoon red chilli powder
  7. Salt to taste
  8. For the Gravy
  9. 3 medium sized onions
  10. 5 garlic cloves
  11. 3 small tomatoes
  12. 3 to 4 green chillies
  13. half inch Ginger piece
  14. one teaspoon poppy seeds
  15. 8 cashew nuts
  16. One teaspoon turmeric powder
  17. 1/2 teaspoon coriander powder
  18. one teaspoon garam masala powder
  19. 2 teaspoon Kashmiri red chilli powder
  20. 1/4 cup oil
  21. 1 black cardamom
  22. 2 green cardamom
  23. 4 whole cloves
  24. 1 inch cinnamon stick
  25. Salt to taste

Instructions

  1. marinate chicken with the ingredients mentioned under marinating chicken for about 30 minutes.
  2. soak cashew nuts and poppy seed in half cup of water
  3. slice the onions and fry in oil till it turns light brown in colour.
  4. Add garlic in the end when onions are almost done. Just fry a bit.
  5. Keep garlic and onions aside to cool and add few cloves, cinnamon stick, cashew nuts and poppy seeds with water and then grind into fine paste. Add more water if needed but make a thick paste. Keep aside
  6. Separately grind tomato green chilli and ginger. Keep aside
  7. Heat pressure cooker and add oil. Crush green and black cardamom in mortar and pestle. Add it into oil
  8. Then add onion paste and stir well for few minutes.
  9. Then add marinated chicken and saute it till the chicken turns white and mixes well with the onion paste.
  10. Then add tomato puree and saute again till the mixture dries up. Add all the dry spices also. Mix well and stir.
  11. Then add approx 1 glass of water to cook the chicken. Close the lid of the cooker and pressure cook for 1 whistle. Simmer for 5 minutes.
  12. Let the pressure releases itself. Then open the cooker and check salt and consistency of the gravy.
  13. Gravy should be neither too thick nor too thin. Add garam masala and mix well.
  14. Serve hot with roti or rice.
